1995 Castello di Selvole Vin Santo del Chianti Classico DOCG
Only the best grapes of Trebbiano and Malvasia are selected to produce the Castello di Selvole Vin Santo del Chianti Classico DOCG, being a the premier traditional Tuscan dessert wine. After harvest, the grapes are dried in a well-aired room for three months to allow the sugar to become more concentrated and then fermented for ten years in small hermetically sealed Slavonian oak barrels. The alcoholic level reaches 17 degrees, with a further two to three degrees in residual sugar, giving this dessert wine its traditional sweet taste. Yellow colour with amber hue, intense aromas of dried fruit. Intense toasted almond, raisins, dried fruits. Softness and roundness in the mouth, good fresh acidity and an incredibly long finish - Castello di Selvole.
